Not that MIDI is my forte but I would have thought if you have midi in and midi out you can record and most keyboards tend to have this. However, you could do it the old way with 2 mics a small mixer and your PC recording sweet

Cracks in soundboards are not a problem most older pianos have them the only time they are a problem is when the buz.

What is intriguing me is the “repinning, restringing (half)” you may as well do it all I would doubt it being a straight strungm straight strung piano not worth it

All manufactures make adjustments to pianos some things look good on paper but just don’t cut it - To look at you would think the Steinway Grands have not change since the models were lunched you would be wrong! I think it is 150 changes have been made since the 50’s and a few to the frame.
